I remember saying I would not post more music and I have broken that promise.  My apologies, sometimes I just want to share what I'm listening to with my cooler buddies, & it never hurts my feelings if you choose to skip over it.

It was a cold day skiing this morning and when I retuned I decided to make my Mexican soup called "Posole". I make the low-fat/calorie version with chicken breasts vs pork. Sometimes I also make the verde version. All simmering in the crockpot all day for a nice hot dinner. Spicy 😉

It sounds delicious and I looked up the recipe. I can get the ingredients from a Mexican produce store we have used before for dried chilies and other products. A couple of questions please...which do you think is better to use dried or canned white hominy? Also if I wanted to try a pork version, if I used lean pork loin to reduce calories would that work or be too insipid?

I use the canned hominy and it is easier. Yes, lean pork would be good too. I never follow a recipe of this sort completely and typically do a bit of my own version. 

You can also use a can of red enchilada sauce or a verde sauce along with diced, mild green chilis.

Don't forget the cumin and diced poblano pepper.

Thank you. Winter is coming here in a couple of months and it sounds ideal. I can get the ingredients early as the shop is not close by so we stock up when we go.

 

I have problems loading things on CC at times, due to glitches they seem to fix in a day or so.

Lola - So sorry for your loss.  It does get better but it also takes time.  Little things would send me into a tailspin for quite a while.  Hang in there.

 

JP - What hotel will you be staying at in Paris?   We are always on the lookout for a new place.

 

Our excitement is that the new RV will be ready next week.  We ordered it over 15 months ago.  I hope it will be as nice as I have been imagining.

 

Now we have to batten down the hatches since they are predicting the possibility of tornados tomorrow.

The main part of the trip is a tour through Slovenia and Croatia - we start in Ljubljana and end in Dubrovnik. But we will stay in Paris twice on this trip. I arranged the air in a complicated way. Of course. I did Albany-Paris RT, then one-way flights from Paris-Ljubljana and Tivat-Paris (no good flights out of Dubrovnik).

 

We arranged the flights to arrive in Paris on the day before we have to be in Ljubljana, to give us a day to relax. And also, that way we can celebrate my birthday in Paris. Coming back from Dubrovnik at the end of the trip we have two more nights in Paris to wind down, and maybe do some food and wine shopping, before we fly home.

 

We are staying in the Quartier Latin both times. I chose this area because it's on the RER B-line which goes directly to/from CDG. We've buzzed through this area on past visits but never stayed there.

 

When we arrive, we spend a night at Hôtel Europe Saint-Séverin. It's a block from the left bank, near Île de la Cité. I found a restaurant nearby, which serves cuisine from Southwest France, for my birthday dinner on the 26th. The menu looks yummy, with lots of duck and foie gras. Will have to report back here about the food. I bought medical insurance in case I need an angioplasty after all that foie gras.

 

On the way home, we'll spend two nights at Hôtel Saint-Paul Rive Gauche. That's closer to Luxembourg Gardens. One more stop on the RER.

 

BTW it looks like France is doing away with the vaccine pass on Monday. Fingers crossed that we don't have to bother with it for this trip.

 

Congrats on the new RV, and stay safe from this crazy weather.

Emtbsam - thanks for your thoughts. 

 

 jp - you must be the most organised person in the world!  Your trip sounds lovely.

 

TrulyBlonde - I suspect that you may not see much of your near neighbour from now on.

 

Everyone - I am sometimes finding it difficult to actually believe and get my head round what is happening in the world at present, and I know that must be applying to many of us.  

 

On a lighter note, I think I will go and make my early morning drink of tea, with a dash of whisky in (not the single malt), take it back to bed for a read of my lightweight novel, and wait for dawn!

Yes, my neighbor has the house all tight and tidy and the outdoor patio furniture has been removed and stored. From what I read, he is also banned from England now.

We will see what happens in my town. The latest news here is that a parcel of prime ski property that was proposed for a hotel and new lift (this barely passed the vote to do it) was just sold to a Russian for a huge amount of money. The seller (prominent here and in Vail) more or less scammed the town and took the huge profit. We are all livid.

The multi-billionaires are taking over the single billionaires here. Not the same town anymore 😞

Good morning, JP, your trip sounds amazing🙂....when do you leave?  I was supposed to be sailing at the end of the month for 18 days but I found out recently I am having surgery on the day Dawn is sailing so my upcoming cruises are a no go.  I did book something for the end of June......should be healed up by that time.

I agree with everyone that the news is all so crazy and makes me so angry too..........the children, all those kids.......☹️

 

Hi Mysty, Chaz, Lola, TB, Que, and all those I missed. Hope all of you are well.
