Royal Caribbean Cruisers -- How Are Things Where You Are? (was "Routine" ​ 😁 ​day in lockdown... how was yours?)

We had friends over for dinner and card playing last night.  I made filet mignon, although not @Sea Dog Greg’s recipe.  I did mine in a cast iron skillet with butter & rosemary, seared on the stovetop and finished in the oven.  They were fantastic.  We also had baked potatoes and roasted green beans.  The appetizer was my world famous stuffed clams with chorizo, known in RI as “Stuffies”.  Okay maybe they’re not world famous, but they are raved about in our circle of friends & family.  Friends brought a pastry assortment for dessert.
 Quite a bit of wine was consumed which may be why I lost at cards 😆
No picture of the main course, I was trying to get everything plated & served hot, but here’s one of the Stuffies.

Your stuffies look delicious!  When I worked in Boston, we used to have a potluck lunch a couple times a year and there was someone who lived in RI who brought stuffies one time and was required to bring them every time from then on!  Your whole meal sounds wonderful.

All I can say about Buffalo is I am glad I am not there today.

Went to a really nice birthday party yesterday, he had a pizza truck outside and they kept delivering various pizza all night for desert he had a ice cream truck and you just ordered anything, had to explain to bartender that I wanted equal amounts of gin and tonic in my drink. Complained to one of the guest that she cost us thousands of dollars , about ten or more years ago she told us we had to fly first class and after one flight we never went back to coach .

Ssshhh don't tell anyone😁😇  but I just realized royal goofed yesterday.

Yesterday I bought internet for $14.99 + 2 extra devices for $11.99 for our march sailing.   

Today it is $13.99 and I was thinking of cancelling and rebooking but I notice we were charged $11.99 for all 3 devices.  Woot woot...a whopping savings of $21

Sigh.  How is it that I'm the only one who understands NY state geography?  😉 Buffalo is Western NY.  Upstate is north of Albany.  Here is what most NYC people falsely think:

I agree with Ellen that some NYC people would even include Westchester in their upstate definition.  Here is the true fact, officially endorsed by me who knows everything, map of NY regions:

 

Upstate is... : r/upstate_new_york

Since we're 7 hours ahead of you, DH was asked by our dinner friends to prepare some kind of salmon ceviche. He marinated the salmon, cut it in small cubes, added small cubes of avocado, smallish cubes of persimmon, purple onion, slightly grilled pine nuts and squeezed half a lemon. Delish.... and no leftovers.

 

The other dish was pasta which he prepared himself, "teared" it and mixed it with his own recipe of Bolognese sauce. Shredded parmesan cheese on top.

 

Myself - I've baked the fluffiest, airiest cheese cake ever. 2/3 -- 5% fat white cheese, 1/3 - 9%. The "trick" was 5 eggs, with the whites whipped to a "flexible foam" and then slowly "integrated" into the cheese.

Ha, Right behind it is a full bottle of Meleti that I got the day before "just in case." I made the "Sea Dog Old Fashion's for my two male guests and they really liked them.

Those stuffies look fantastic. Your dinner sounds delicious. I too forgot to take any pictures. I was so focused on cooking everything in time and getting it served that I forgot to take some pictures. I am weird in that when I have a dinner party I have my guests sit and then I serve them, no self serving. I try to make dinner at my home as much as restaurant experience as I can. It was challenging making cocktails and cooking the risotto at the same time. I pretty much baby sat the steaks so they would not get over cooked. Most everyone liked their steak medium rare to medium which was good.
