How about a rematch of 1994 Cup finals? 😉🙂

A few of the sports writers in the NY Media have been trying to draw parallels between this years team & the 1994 team that won the cup. Things like both the Rangers & Knicks having playoff success at the same time (happens less often than you think),  the Rangers 7-0 playoff start with a first year coach to some of the more ridiculous things the solar eclipse and earthquake that occurred around the same time in 1994 & 2024.  Oh, and OJ being in the news both years. 94 was the Bronco chase and his passing earlier this year.  They might be trying to stretch the point with that last one.

If they got that far that'd be pretty great... Tonight didn't go to plan.

Just in case no one saw it, there is a geomagnetic storm that may let some of us in the north see the Northern lights.  They may be visible tonight and tomorrow night.

Hoping for the clouds to clear out.

They say that they are visible in Europe and UK now, since it is already dark there.

We could see them clearly from the south of England last night

A bit behind so apologies if I've missed something important.  I'll try and catch up tonight.

We've finally got some good weather here.  On Thursday we went to Bournemouth/Poole for a walk along the beach and yesterday we drove to Baron Rothschilds weekend party house, Waddesdon. Its now jointly owned by the family and the National Trust. We went for a wine tasting in the wine cellers. The family have thousands of bottles, one magnum is worth half a million pounds.  There are loads of Rothchilds vineyards all over the world including China and California.

Today we hope to go out on the boat for the first time as the Thames has finally dropped from red to yellow, decreasing status.

WOW!! Incredible pictures. I wish we could have seen it. We drove for about an hour outside the city to see if we could see it. Unfortunately no luck.

I put the whole trussed chicken in a large Ziploc bag.  Herbs vary depending of what I have on hand, but usually, add 3 or 4 garlic cloves, 3 or 4 slices of lemon, a few sprigs of rosemary.  Then fill bag with broth.  I make sure the cavity is full of broth, and then squeeze out all the air and close bag.  I place the sealed bag in a pot of water and sous-vide at 60°C (140°F) for 60 minutes. After that, I remove chicken from bag, season with salt and pepper and place on spit.  I usually do 2 chickens when I do this because... well just because 😉.

This gives a really nice moisture to the usually dry parts and the cook time on the spit is reduced since the chicken is already half way there.

I feel validated since Alex the French Cooking Guy, demonstrated a similar method used by top chefs last year. They only poach for 20 minutes, but not sous-vide, they dunk the chicken in a whole pot of broth.  I'm too cheap to waste that much broth.

If anyone tries this, let me know how it turned out.

Thanks. I'll definitely be trying this, but I think I'll do a basic rotisserie first.  You know...I need to get a baseline data point first.  All in the name of science. 😁

Some people in the south saw a little bit lights too......pink and green....and NO it was not Lilly Pulitzer doing a light show in her signature colors, or that rocket launch that we see sometimes from the back yard, it was that Mighty one up there.
Not as beautiful as Sue's pictures, but like some random fireworks or colored lightening flashes.

Then we had a drenching rain storm.

Have either of you tried to sous vide lobster tail?

14 hours ago, dpostman said:

Hum... nope.  I would definitely try that thought.   Oddly enough,  we had whole Lobsters 🦞 yesterday for my DD birthday.  Leftovers today along with grilled burgers 🍔

I've never even thought about that.  Makes sense though.  One of the biggest problems with cooking lobster is leaving them in the pot too long.  Sous vide would let you more precisely control the temp.  I would think that the vacuum seal would not be necessary though.  Maybe just cook them in a sous vide controlled large pot???  Time to do some googling...

Edit...Serious Eats (my go to web site for all things sous vide) agrees that sous vide is the best way to cook lobster.  It's a little more involved than traditional techniques needing to par boil the lobster first, then remove the meat, then finish using sous vide.  Adding this to my list of things to try.

Our sunset.  Home tomorrow.  For a sea day we were busy.  A tornado wrecked havoc 14 miles north of us and spent a lot of time on the phone walking the house sitters through powering up the generator etc.  Thank goodness we only have branches down.  How many we will find out tomorrow.

I think that same storm continued east across northern Florida and hit us.  High winds and lots of thunder.  No tornado but we have a lot of smaller branches down.  Not as bad as you.

Hey Sis, Great choice.  That is one I really like, maybe you will let me borrow yours😉

I am not a beaded bling bling Mary Frances girl, but when I saw that one, I had to have it.

Will bring it on Feb cruise, you can borrow.😁

Please return with a few $100 bills that you may win in the casino. Hmmmm, maybe will also give to our Lucky Sue to borrow if returned with some casino winnings in cash! Shall we get into business Sis?😁

I wonder what our American friends would think of Swiss Chalet?

Lisa and I occasionally go there for lunch if running errands and often think the couples there are people having affairs.😂 The rest of the clients are seniors at the noon hour.

That chicken looks amazing.

@FromSea2ShiningSea Helen... Japan looks amazing...

@HBE4, @A&L_Ont, @bobmacliberty and @lenquixote66

How about those Canucks!!!

I'm definitely missing the chaos that would be sweeping my old home town...  🙂

30 years since these teams played each other. one can’t help to be excited. Like how they are using their original warm up song. U2 just brings it as they come on the ice.

Oilers pulled out a win last night. I have Edmonton beating Vancouver in my hockey pool. Don’t worry, I also had them winning the Cup again so I could be wrong. 😂

A few photos from here last night. Just had to walk out past the barn lights for the best views. I’ve never seen them like this at home ever. I’ve seen them at our place in Alberta but that is much further north.

I thought Hailey’s Comet was amazing but this beat it hands down.
