LOL- WE had a day on my Millennium cruise when all I could find was gravlax. I like gravlax, but I was looking for smoked salmon for my bagel and cream cheese.

 

I asked the server behind the counter if smoked salmon was elsewhere on the buffet when the man behind me jumped in to mansplain to me that gravlax was smoked salmon.

 

At the end of my womansplaining to him, he knew:

 

1. The process to cure gravlax, including the variations on ingredients.

 

2. The different between a cold smoke salmon and hot smoke salmon process, including the salinity of any brines used.

 

3. While  many incorrectly use the term "lox" to mean any smoked salmon, lox is actually only brined and not smoked.  If it is smoked, a real lox has the texture of a cooked piece of salmon.

 

One never knows when the person in front of you in the buffet may have at one point inspected every smoked fish and brined fish manufacturer in NYC.  There used to be quite a few.
