Good Morning to All!  Thanks for the daily and fleet reports.  Still catching up with all the posts yesterday.

 

Martina tells me every day is Cat Day.

I even had cats at my last job in Najran KSA.  They were strays; had to leave them when I left.

I prefer frozen yogurt (is there a difference?) and I love zucchini.  What a smart man Lincoln was; too bad people try to lie all too often.  

 

I just made chicken enchiladas last Thursday  - even made homemade sauce.

The drink and wine sound interesting and I have never been anywhere in Japan except Tokyo and Mt. Fuji.  Great days in the past!!

 

Yesterday was a LONG day!! Got up at 0200, left at 0310 and got home at 2015.  I actually like driving so it was pleasurable BUT I had to get up this morning at 0330 to get ready for the gym at 0500.  Well, I overslept until 0410 and was tired working out.  I think part of the problem was I didn't eat much yesterday.  A taco, Wendy's french fries and 2 pieces of deli ham.  Hmmmm.

 

Was asked to sub for one of the FWHS teachers that I know; math and what is now called Educational Professionals.  Like Future Teachers basically.  I am excited I was asked.  I now have 6 days booked!  Hardest part is keeping track of the weeks I am working and not to go over 20 hours a week.  Nothing from TUSD yet, which seems weird.

 

Today is a rest day.  I may not move much and maybe have a nice meal.

Good morning all!

Another cloudy morning, but the sun should break through later like it did yesterday and get to the mid 70's.  

I'm all for Cat Day and wish we still had one but long travels have taken precedence.  Our last cat passed in 2011 at the age of 17.  She was abandoned at only a few days of age and I raised her with a tiny kitten bottle.  No surprise, she thought I was her Mama and we had a very close relationship! 🤣  Here she is with our DD who chose to have her in one of her high school graduation photos.

 

If frozen custard is the same as yogurt, I'll take some.  Will pass on the zucchini, drink, wine and meal.  Enchiladas are one of the only Mexican dishes I don't care for.  Love the quote, have never been to Japan.

Good morning from the car service center. Prepping for our drive north Saturday to cousins Remembrance gathering in Hudson Valley area of NY. It’ll be great to see so many cousins plus my sister and niece!  
 

The storms last night were dramatic here but not as damaging for our area as for too many others. 
@smitty34877 So glad you made it to appt before rain or worse. Hoping Lou can manage some food, it’s also very important medicine!  
 

Blessings Terri for success at the lawyers.  We are not making progress with our trust update. She hasn’t found the time to speak with us since April. We were very available for months but now getting busy. I hoped we’d be done this year but it’s doubtful now. I just have to be patient and believe I won’t be in a lurch (if DH dies while the old one is still in effect). Grateful for every day!  

Enchiladas were a staple in NM!   Versatile, served in every possible form. Beef, chicken, Turkey, cheese only, corn (yellow, white or the extra special blue corn!) or flour (white or whole wheat) tortillas. Always covered in chile!  In NM the most asked question is, Red or Green?  I learned to ask, Which is hotter?  They were always proud to tell you of their “good” chile! Good=hot!  Then I’d order the other choice!  Often people ordered “Christmas” which meant half red/half green chile sauce. Homemade chile sauce isn’t hard but it does take time and forethought. Red is made from dried red chiles: wash, break open, remove the seeds, simmer in water then blenderize.  For green it’s similar but chop the roasted green chile, don’t blenderize. From there it varies by family. But the basics are to cook onions, garlic, oregano in lard, add flour to simmer a roux, add chile, simmer. Maybe add meat for flavor, especially a small amount of pork. Now you have chile sauce. The meat for the enchiladas should be simmered in chile sauce for an hour or more, either red or green chile, before removing the meat to shred it for layering into the tortillas; then layer with chopped onions and cheeses. Enchiladas in NM are served rolled or flat. Flat has a better ratio of layers:tortilla. Bueño!

Been researching some shore excursions for Quebec City and Boston. My hip hasn’t been good lately but maybe I’ll find the right combination of exercises, shoe lifts, NSAIDs and a walking stick so I can enjoy some of the ports. 
 

Will have to go back and find the back-story on Camilla. Great picture of her!  We’ve been going through DH’s boxes (and boxes!) of old family slides.  Kids grow up fast. Life flies by for those who are lucky enough to get old enough to look back. Today is everything!  Enjoy it!

Back in MN safe and sound.

 

The drive from Peterborough was mostly uneventful. Except for a smallish bear running into the side of our car on M-28 somewhere between Raco and Strongs Corners in the Upper Peninsula....

 

Left a bit of a dent (no mechanical damage) in the driver's door and some fur. It wandered off after being stunned for a few minutes.

I know cats will be celebrated here; I've never had one. I grew up on frozen custard at the boardwalk on the Jersey shore. I used to sneak zucchini to neighbors, but haven't grown any for many years. True quote. The meal sounds good, if someone makes it for me. Pass on the drink and maybe to the wine. I haven't been to Kanazawa. Good move by the University of Otago.

 

It's a nice sunny day here, and not too humid. Storms weren't bad here yesterday, and I wish we'd gotten more rain. I'm about to head out to PT shortly. Maybe I'll consider doing some shrub trimming later this afternoon.

 

@StLouisCruisers Enjoy Isafjordur. Frozen custard is made with the same ingredients as ice cream, plus egg yolks, so it's richer and creamier.

@smitty34877 I'm glad you made it to DH's appointment ok. It sounds like just as he'd start to feel better from the chemo, it's time for the next treatment.

@marshhawk Sorry to hear you had a bad night. I hope you get good news from you lung doctor today.

Greetings from Isafjordur!  It is a beautiful day here in Iceland.  We went to the Dynjandi waterfall.  It was a small private excursion and Val most of those on the bus were from our roll call.  After the waterfall we went to a farm for coffee and cake.  Mmmmm.

I perhaps posted too soon.  Our underground utilities are mostly pretty reliable but things can happen.  My power went out about 9:45AM.  Expecting it wouldn't last too long I left home at 10 for my Tuesday run to a supermarket on the other side of town and to Panera.  When I arrived home I the first thing I did was go inside and check the power.  It was still out and my utility did not yet have an update.  I grabbed the frozen foods and headed up to the firehouse where the frozen foods and today's purchases are sitting in the office fridge.  A crew has arrived on the scene with a restoration estimate of 2:30 (another 90 minutes) so I'll hang out here until it's done.

 

I'll get my exercise today carrying stur from the store and home out to the car, into the firehouse, and back to the car and home.

@dfish Wow on those pictures!  I wish I was there !

 

ok, are you ready?  Good news on the lung.  What started out as 8mm large, and the doc wanted to do emergency surgery, to which I said, no, I have to go to Alaska, to right before we left, it was 10mm, but not cancer, go to Alaska.  Got covid.  Came home had another CT, and met with him today.  He was very excited, whatever it was has broken apart, nodules he said, there are 5, but  nothing bigger than 5mm.  With the COPD I still havent passed a breathing test to his satisfaction, but breathing tests every 4 months, and one CT per year with follow up visit.

I encourage you to try frozen custard.

It is similar to ice cream; it is not frozen yogurt. 

The main difference between frozen custard and ice cream is that frozen custard is made with egg yolks and ice cream is not, giving the former a richer flavor and mouthfeel. 

 

Another big difference is in production method. Because ice cream is made in a machine that churns air into the base as it freezes, it has a lighter mouthfeel. Frozen custard is produced in a machine that incorporates as little air as possible, so it has a denser, thicker, more velvety texture than ice cream.

Thank you Tina.  You know, I think I have had it before (can't remember where or when) and I really liked it.  It was better than frozen yogurt.

Good morning or afternoon to all wherever you live!

Love the pictures .  We enjoyed that same view when we were there.  All Iceland's waterfalls and landscape are awesome.  Enjoy your visit.

We are packing the trailer for our road trip to Yellowstone Park.  We leave Thursday.  I have been multiple times but still enjoy visiting.  Although the traffic and huge amounts of people can be a nuisance, we will enjoy every minute.  We have a RV campsite reserved at Fishing Bridge.  Will be our base for traveling around the park.  Taking our almost 13 year old grandson with us.  He is very excited.  Have books ready to listen to as we make the drive.  

Thanks for all the information.  It is a lot of work and I appreciate it.  Read it almost daily.  Enjoy catching up with everything when I can.

Prayer to all.  A lot going on in everyone's lives.  Cheers to those celebrating.  I am celebrating my pink eye infection is almost cleared up.  Not sure where I got that.  Escaped pink eye during all the years I taught school.

I don't think mine qualify as international cats--they don't even have passports. I loved frozen custard and wish it were still readily available. I have one zuke in the fridge and that is enough.

 

Chicken enchiladas would be OK but I don't plan to make any. A Mexican Julep sounds like a drink that has been messed with too much. I would probably like the wine if it were obtainable; instead I might have Fulkerson Zweigelt, which is made from a completely different grape. I haven't been to Kanazawa.

Thanks to you and all who explain the differences in frozen custard and frozen yogurt. There’s a famous frozen custard place in St Louis called Ted Drewes I think. Never really went there.

I haven't been checking this board for awhile and was wondering why no sailaways from FLL?  Miss those "parties".
