Good Afternoon All, thanks for the daily fleet report.  Today’s quote is spot on.  I was allowed to sleep in until 5:30 this morning.  When I woke most of the herd was lurking nearby.  Dropped DH’s car off for inspection and repairs and had a much needed visit with our chiropractor.  After lunch at Texas Roadhouse we spent the afternoon staying cool by catching up on episodes of “All Rise”.   Tomorrow promises to be another hot one.  I hope that everyone has a good day today.

I want to make Jersey sloppy joes.  And I often wonder if they only came from Morris County, but here goes-in layers

rye bread

thousand island dressing

roast beef (or ham, or turkey)

cole slaw

swiss cheese

thousand island  dressing

ryebread, and then repeat

so that it's two layers of meat. 

 

Now since all of DH's surgeries, I just make then with two slices rye, the problem is that the cole slaw has to be a moderately sweet coleslaw

(the deli near my home in  NJ would not give me the recipe, even when i showed them i had moved)

and the closest thing to their coleslaw was Chick Fil A, but then they thought that since young people wanted to eat healthier, like Kale (gag me) they did away with cole slaw.

So now I have to go to a BBQ place to get the coleslaw.  We have enjoyed eating there over the last 30 years, but they have no sense of covid, masks or spacing.  And it's not that clean, mainly because none of their employees last longer than one or two months now.  Used to be they would be there for years.  So we are off to the BBQ place once DH gets off work, but does anyone have a sort of sweet coleslaw recipe?  this was not my mom's forte.  she made great mac and cheese, but lacked salad knowledge.

@marshhawk, have you tried KFC coleslaw? Friends think it’s the best as we do. Susan

I think I’ll try this recipe. Thank you so much for sharing this. And I have everything but the sour cream. I really try to avoid cream soups so this one sounds really good.

That's the exact recipe my Ohio grandmother taught me as a kid. You're right, it's not as sweet as the bottled Marzetti dressing I buy, but your recipe is my 'go to' for homemade slaw dressing. And, it's perfect with fish!

Greetings.

It has been a long day . My Rotary Club held its annual picnic for foster kids today.  Kids in foster care often do not have much. Their foster families are paid an amount to feed and cloth them but they are often isolated by their peers and by society in general. We have an annual "day" where we play games, give out sports equipment (volley balls, basketballs, baseballs, etc and school supplies and just try to make them feel like any normal kid. It is a "feel good" event for those of us who participate.

As for the collection of days, I love spinach- raw, cooked, creamed, whatever. I also really like snakes. They are amazing creatures and, often, quite beautiful. One needs to respect them as with other wildlife, but they play an important role in nature.

I was in Whittier only two weeks ago. The most amazing thing about this port is the tunnel. What an incredible piece of engineering!

The quote for today is, sadly, all too true. Our society seems to be on track to become anti-intelligence. The more science discovers, the more people reject it. Einstein has been reported to say that there are two examples of infinity: the univers and the human capacity for stupidity. I don't know if he actually said that, but I would not disagree.

A late good afternoon from central Texas where it is 99F, but the sun makes it feel hotter.

 

We wanted to get out of the house and do something besides doctor visits and PT appointments.  We took the convertible for a long drive even though it was too hot to put the top down.  We also wanted to check out the hospital where DH will have his back surgery if and when it happens.  Since there are three possible ways to get there, we took one over and another back.  The third route basically follows the second route, but goes through Waco.

 

We also stopped for hot fudge sundaes, and took a side trip to look at the coal mine about 30 miles further down the road.  Yes, Texas has a big open pit coal mine, but it looks like the working area has moved since the last time we were there about 20 years ago.  Some of the land has been reclaimed, and part of the open pit has water in the bottom.  They use really, really huge drag lines to move the dirt and coal.  Remember everything is supposedly bigger in Texas.

 

It looks the mine, coal fired power plant and steel mill nearby have been closed.

 

We enjoyed the drive and the chance to do something normal.

 

@HAL4NOW  This behavior is new to us too.  There are advantages of living in a small, country town.

@kazu  Jacqui, again thaks for sharing @luvteaching Karen's  update.  I feel sorry  for the cruisers who were on their first Alaskan cruise, and had to miss ports.

@Seasick Sailor  Joy, I hope your sister made it home safely.  Wow about the lines for security.

@bennybear  I'm enjoying all your flower pictures.

@jimgev  That tunnel is amazing, especially as it was built during WWII to move supplies to the interior of Alaska.  I also agree about the quote and what Einstein is credited with saying, even if he didn't actually say it.

Taking some time now for an iced coffee and a break from our pre-lake preparations.  A question - does anyone know if @Vict0riannever received Pat's luggage before they boarded the ship?  I certainly hope so.

 

I posted this on FB and thought I'd share it here - it's a tad too hot to eat on the deck this evening; DH has said he's going out to pick up "something" for dinner which we'll either eat in the house or maybe the pergola.  I'm thinking the house will win because of the air conditioning. . . .

Exactly!  We’re not so frozen right now, except for the ice cream,   I had two crazy local flavours yesterday,  a strawberry jammy rhubarb, and prairie fairy,  a blackberry and raspberry beer sorbet.   I know you like ice cream.

What a nice thing our Rotary club is doing 👍 Absolutely first class!

 

One of the things I loved about Rotary.  there was more than one occasion when I left to go to the car with tears in my eyes as I was so moved.

@marshhawkDid you live in or near Chatham NJ?   I was there for 15 years and my parents for 40.    That’s the only place I have ever had those wonderful Sloppy Joes.  Thin sliced usually ham and Swiss best chilled the next day.   Very popular as finger sandwiches for showers and other parties.  Always best from the deli.  

 

I don’t post here very often but follow most every day.

Good evening.

I am late to the game again.  However I did want to check in and say hi to everyone.

As for the days I love spinach, but keep my distance from snakes.  I remember the “woodie wagons” but not sure I ever rode in one.

The meal and the wine both sound good.

It was a busy Saturday.  Since we are leaving for Williamsburg tomorrow I had to move up my appointment to get my nails done.  So that took some time.  

I also decided to fill up the car and spend a fortune doing that.  Bought a house gift for our hosts.  Then I came home.  Expected to get my packing done.  However, DH lost something and we spent a good part of the afternoon looking for some thing that was never found.  God only knows where he put it.  this is nothing new.

Finally am all packed except for the last minute stuff tomorrow and then off we go.

 

@StLouisCruisers i had the same pain behind my knee for the longest time after I had Covid.  It finally left me.  I have no idea what it was but it was also keeping me awake at night. I found that Tylenol helped somewhat and Voltaren.  Also elevating my legs. I think you just have to let it run its course.  I hope it gets better soon.

 

We are going half way tomorrow and stopping in Rocky Mount, NC.  We will then continue to Williamsburg on Monday.  Just don’t want to do 8 hours of driving in one day.

Will post when i am able.

@tamsno  Yes I did, on Robert Drive  in the Rolling Hills sub division.  (now owned by the Catholic Church) A block from Southern BLVD, volunteered at the Great Swamp in high school (cleaned up trash and operated the film projector back in the early 70's).  My dad and I would each get a sandwich on Sunday, and we disappeared for hours, munching away.  Did you get yours from the little mall across from Friendly's or up on the hill?  I didn't go to school in the township after sixth grade, so except for the neighbors from early childhood, I don't really have memories of many people, but I am still in touch with my old neighbors.  What nice memories you brought back for me.  Thank you.

@Cruzin Terri  DH is the king of losing things, and since he doesn't want to tell me what he lost, or forgot,  I just wander around, and listen to talk to himself to get clues on what he has lost. 95% of the time it's his glasses.  LOL.  Usually left in his pocket, or on his head.

Well, to continue a crappy month, my brother’s car just got hit and probably totaled by an almost certain drunk driver. The car was parked in front of the house . The idiot also hit the car in front of his. The police have not apprehended him yet, but know who he is,. The car is 11years old . The left rear side was hit. 
Life sucks.

Terri, thanks for your information about your leg pain behind your knee after Covid.  I hope that's what this is and will leave on its own.  Last night was better than the night before so I guess it comes and goes.  

 

As for your trip to Williamsburg, I hope you have an enjoyable stay in that beautiful place.  I miss living there, although I didn't miss the humidity.  We moved from there back to our hometown of St. Louis (not the city thank God, the suburban counties surrounding it) and Missouri is known for its humidity too.  Please report back on the things you do and see there whenever you can.  I'll live vicariously through you!  Remember to mention to your hosts the Colonial Parkway and see if they'd like to drive from Jamestown to Yorktown on it.  It goes right through Williamsburg along the route.  I lived nearer to Jamestown when I was there.  Beautiful countryside.

That's just horrible.  I do hope they catch the idiot and through him in jail.
